Introduction

Ingredients

    1T butter
    1C quartered white mushrooms

    8oz whole wheat spaghetti, broken into thirds
    1 large onion, halved and thinly sliced
    2 C shredded red cabbage

    1/4t salt
    1/4t pepper

Directions

Start a large pot of water to boil for the pasta. Cook according to package directions and drain. Place in a large bowl

While water is boiling, melt butter in a large skillet. Saute the mushroom pieces in a single layer for about 8 minutes, or until golden. Add to large bowl.

In same skillet, sauté onions for 5 minutes or until beginning to wilt (add some EVOO spray is necessary) Add cabbage and continue to sauté for about 10 more minutes or until the cabbage is cooked to your liking. Add to large bowl.

By this time, the pasta should be cooked. Add drained pasta to the large bowl along with salt & pepper. Toss well and serve!
