Introduction

If you like greek yogurt, you should absolutely try making it at home. Using a slow cooker makes it very easy - it takes some time but almost no effort! Ingredients

    Half-gallon of milk - I used a container (64 oz) of organic vanilla soy milk from Trader Joe's
    Half-cup of yogurt - I used 4 oz of organic greek-style nonfat plain yogurt from Trader Joe's

Directions

Pour milk in slow cooker and heat on low. After 2.5 hours, unplug crock pot and let it sit. After 3 hours, remove 2 cups of warm milk, whisk in yogurt, add back to the cooker and mix. Cover cooker with thick towel and let sit 8 hours or overnight. Strain yogurt with cheesecloth or coffee filters to remove excess liquid (I use coffee filters and let it sit in strainers in the sink for a few hours).

The length of time you strain will affect your yield. For me, it has worked out to make about 34 oz of yogurt, or 8.5 4 oz servings.

The nutritional value reflects this specific yield, as well as my specific ingredients, but you can use whatever type of milk (soy, almond, coconut, cow's, goat's) or starter yogurt (greek, regular, plain, organic, soy, etc.) you want to use.

Serve with whatever toppings or mix-ins you like - honey, flax seed, cocoa powder, fruit, granola, agave nectar, cereal, nuts, etc. - or it plain. It's delicious!
