Ingredients:
*Potato, raw, 12 medium (washed and quartered for boiling)
*Cumin seed, 2 tbsp Kale Jeera (black ideally)
Onions, raw, 1 large (chopped)
Cilantro, raw, 1/2 bunch chopped
Jalapeno Peppers, 3 peppers chopped (remove seeds for less spicy)
Salt, 1 tsp or to taste
Egg, fresh, 6 extra large for patty bath
*Bread, Progresso Bread Crumbs, Garlic and Italian Herb, 1 cup to coat each patty
Olive Oil, .25 cup for cooking the patty's (divide in half)
Directions
Cook potatoes and cool in advance (leave on skin)
Mash them with potatoe masher and add:
1. Kale Jeera (black cumin seed) about 2 Tbsp
Chopped onions, jalapeno peppers, cilantro, and salt.
Mash again and then begin the process of making patties that are just smaller than the size of your palm. They are about 3" round and slightly oval in shape. Dip in egg batter and then in bread crumbs. Set aside on wax paper on cookie sheet.
Heat skillet with 1/2 of the olive oil -- doesn't have to be a lot of oil. Place 1/2 of the patties in skillet with heated oil and brown on each side. Remove to tray and let sit at room temperature. Use next 1/2 of oil and finish up frying the patties. You can quickly reheat in the microwave just before serving or in the oven for about 5 minutes at 350. Serve with mint/cilantro chutney sauce.
Serving Size: makes 24 patties -- 2 per person
Number of Servings: 12
