Ingredients

½ cup whole wheat pastry flour
1 cup whole wheat flour
1 cup white whole wheat flour
⅓ cup sugar
2 teaspoons baking powder
1 teaspoon egg replacer
¼ teaspoon salt
3/4 teaspoon ground ginger
1 tablespoon ground cinnamon
1/4 cup unsweetened or vanilla soy yogurt
1/4 cup soy or almond milk
1 teaspoon vanilla extract
½ cup vegan margarine (chilled)
1 green apple, chopped
4 oz crystallized ginger, chopped
Directions
Sift together the flours, sugar, baking powder, egg replacer, salt, ginger, and cinnamon.
Combine the yogurt, milk, and vanilla, and whisk thoroughly to combine. Allow to stand in the refrigerator while you complete the next step.
Cut the margarine into the dry ingredients. The margarine should be straight out of the refrigerator.
Add the yogurt mixture to the margarine mixture and combine. Fold in the apple and ginger.
Preheat the oven to 425 degrees. Turn the dough out onto a floured cutting board. Pat it into a rough circle, then cut it into eight pieces. Place the scones onto a lightly greased baking sheet. Put the sheet in the fridge while the oven preheats, then bake for 15 minutes or until lightly golden.
