Introduction

Easy sandwich for breakfast, lunch or dinner! Easy sandwich for breakfast, lunch or dinner!

Ingredients

    1 egg
    1/3 cup tofu
    1/2 cup spinach
    1/3 cup diced tomatoes
    1/3 cup mushrooms
    half slice of swiss cheese
    2 slices of light wheat brea
    ketchup (optional)

Directions

Start with the spinach, tomatoes, and mushrooms in a skillet on medium low heat. After about a minute, beat the one egg and add to skillet along with the tofu and cheese. Scramble all the ingredients together. Once the eggs are cooked, add the scramble to one slice of bread, which can be toasted first :) I like to squeeze some ketchup on top of the scramble and then add the second piece of bread. Enjoy this delicious scramble sandwich!
