Ingredients

    * Orzo, Barilla, uncooked, 8 oz
    * Olive Oil, Extra Virgin, 2 tbsp
    * Shallots, 4 tbsp chopped
    * Swanson's Organic Vegetarian Vegetable Broth, 2 cup
    * White Wine, 0.5 fl oz
    * Roasted Bell Pepper Strips, 2 oz
    * Lemon Juice, 1/2 lemon yields
    * Zest of 1 lemon
    * Fresh Chives, 2 tbsp

Directions

In a heavy-bottomed medium saucepan, heat the olive oil over medium-high heat. Add the shallots and saute until fragrant and translucent. Add the orzo and toast for 2 minutes, stirring occasionally. Add the wine and cook until absorbed.

Gradually add the vegetable broth, stirring frequently. Bring to a simmer, lower the heat, and cover. Cook for 8 to 10 minutes, until the liquid is almost absorbed and orzo is tender. Remove from the heat.

Stir in roasted bell pepper, fresh chives, lemon zest, and lemon juice. Season the orzo with salt and pepper, to taste, and serve.
