Ingredients

    12 oz chicken breasts, cooked, chopped
    1 sm onion - diced
    3 cloves garlic - minced
    I lg celery stalk - chopped
    1 pepper - chopped (I use red, orange and yellow)
    1 tbsp cumin
    1 tbsp olive oil
    1 14 oz can tomatoes (I use no salt added)
    3 cups vegetable stock - no salt
    juice from 1 lime (approx 1 tbsp)
    1 cup cooked basmati rice
    hot sauce and pepper to taste

Directions

Saute onion garlic, celery and peppers in the olive oil, about 5 minutes.
Add chicken & cumin and cook for another 5
Add remaining ingredients, and simmer for an hour or two.
Makes 5 large 1 1/2 cup servings - of very thick soup!
