Ingredients

    1 Pkg Bell & Evans Turkey Breast Cutlets (5 cutlets per pack)
    1 Medium Onion, diced
    3 cloves garlic, minced
    2 Tbsp Olive Oil
    juice of 1 lemon
    1 cup brown rice
    2 1/2 cups low fat chicken broth
    Salt (optional)
    Black Pepper (optional)

Directions

RICE:
Bring the chicken broth to a boil. Add the brown rice and simmer covered for 50 minutes or until the rice is cooked.

CHICKEN:
Heat the olive oil in a large skillet. Add onions and garlic. Cook until soft. Add the turkey cutlets and cook until nice and golden brown on each side. Take off the heat and add lemon juice, salt and pepper. Serve over rice.

Goes very well with some nice steamed broccoli.

Makes 5 servings.

    Very Good
    Very tasty and moist.....my kids even loved it! I did however have to add a small amount of chicken broth to the cutlets while they were cooking to keep the onions and garlic from burning. Will definitly make again! - 4/9/11

    Great flavor in rice AND cutlets, took much longer to cook rice than 50 minutes for some reason. I will make this again! - 2/23/10
