Ingredients

2 cups low-sodium beef broth
2 teaspoons Mrs. Dash Caribbean Citrus seasoning
3/4 teaspoon salt
1 cup uncooked brown rice
1 cup frozen peas, thawed
1 small yellow pepper, cored, seeded and chopped
4 scallions, thinly sliced
1 pound chicken tenders
Directions
Place broth and 3/4 cup water in a medium-size saucepan and bring to a boil. Stir in 1 teaspoon of the citrus seasoning, 1/2 teaspoon of the salt and the rice. Reduce heat to low. Cook, covered, for 30 minutes. Stir in peas, yellow pepper and half the scallions. Cook for 15 minutes more or until rice is tender and liquid is absorbed.
Heat broiler. Coat broiler pan with nonstick cooking spray. Season the chicken with the remaining teaspoon citrus seasoning and remaining 1/4 teaspoon salt. Broil for 5 minutes, turning halfway through cooking time, or until internal temperature reaches 160 degrees F on an instant-read thermometer.
Garnish with remaining scallions and serve alongside rice.
