Number of Servings: 6


    2 tsp lemon juice
    2 tsp red wine vinegar
    8 tsp extra virgin olive oil
    1/2 tsp dijion mustard
    1/2 tsp dried oregano, crushed between your fingers
    1/4 tsp salt
    1/4 tsp black pepper

    1 (15.5oz) can of chickpeas, drained and smashed lightly with a potato masher
    1 (12oz) can of tuna, drained
    1/2 cup celery, diced
    1/2 cup carrots, diced
    1/4 cup red onion, finely diced
    11 Kalamata olives, finely minced


Combine all the dressing ingredients in a small container with an airtight lid. Cover and shake to emulsify.

Combine all the salad ingredients in a large bowl. Toss lightly with the dressing.

Serve on a bed of lettuce, a slice of whole grain bread, or enjoy simply by itself for a high protein and healthy balanced meal!
