Number of Servings: 6

Ingredients

    1 pound choizo sausage, casing removed and meat crumbled. (may substitute if you can't find chorizo)
    1 large onion, chopped
    6 ounces mushrooms, sliced, about 1 cup
    1 cup sour cream
    6 large eggs
    1 cup shredded cheddar cheese
    3 tablespoons cilantro, chopped
    Salt and freshly ground pepper

    (not calculated into nutritional info) 1 package Somersize Salsa Dip Mix, or 1 cup drained fresh salsa

Directions

Brown sausage in a large skillet, about 5 minutes
Add onionand cook for 5 more minutes
Add mushrooms
Cook for an additional 5 minutes

Blend dip mix and sour cream together
Add to sausage mixture

Bring mixture to a simmer, then crack 6 eggs on top.
Cover pan and cook on low heat for 8 minutes.
Add shredded cheese, replace cover, and cook for 4 minutes more.
Salt and pepper to taste.
Sprinkle with cilantro and serve.
