Ingredients

1 and 3/4 c. unbleached flour
1/2 c. reduced fat Mexican blend shredded cheese
2 tsp. baking powder
1/4 c. sugar
dash salt
1/4 tsp. cayenne pepper
1 Omega 3 egg
3/4 c. 1% milk
1/4 c. safflower oil
6 slices shoulder bacon, cooked and crumbled
Directions
Mix dry ingredients together. Mix wet ingredients separately. Add wet ingredients to the dry and mix just until you can't see any more dry ingredients. Fold in crumbled bacon. Fill muffin tins pre-sprayed with non-stick cooking oil. Bake in a 375 degree oven for approx. 20 minutes.
