Introduction

This is a Tex-Mex twist on a Spanish tortilla. It makes for a filling, yet healthy breakfast or side-dish that you can prepare in the beginning of the week and eat off of for days. Ingredients

    8 large eggs, beaten
    2 large russet potatoes
    2 tbsp olive oil
    1 1/4 cup black beans (canned is easier, drained)
    1 cup chopped onion
    1 cup chopped bell pepper
    1/2 jalapeno pepper, chopped - seeds scraped off
    1 tsp salt
    1/4 cup reduced fat colby-jack cheese
    cilantro (optional as garnish)

Directions

1. Peel potatoes and dice them into 1/3in cubes

2. Place in a large, oven-safe skillet over medium-high heat and cover with water. Bring to a boil and cook until slightly tender but not soft.

3. When potatoes are done, drain. Then place them back in the skillet along with the olive oil, onions, bell pepper, jalapeno, beans, and salt. Cook for 10 min over medium heat or until the potatoes are soft. Stir occasionally.

4. Preheat broiler.

5. Pour the beaten eggs over the mixture and give it a quick stir to blend the ingredients together. Then cover and let cook for about 10 min. DON'T STIR.

6. Uncover and sprinkle cheese & place skillet in broiler until the top is golden brown.

7. Take out & ENJOY!
