Ingredients

    * Onions, raw, 1 medium (2-1/2" dia) (remove)
    * *Baby spinach, fresh 6 oz. package, 4 cup (remove)
    * egg white, fresh, 1 large (remove)
    * Egg 'Winn/Dixie' Large or 50g. Size, 50 gram(s) (remove)
    * Flour, white, .5 cup (remove)
    * Baking Powder, .5 tsp (remove)
    * milk 2% great value, 1. cup (remove)
    * *winn dixie Crumbled Feta, 4 oz (remove)
    paprika to taste

Directions

Serving Size: made 12 muffin size individual quiches
Preheat oven to 400F.
Lightly spray a muffin pan with pam.
In a medium frying pan, cook diced onion with a bit of cooking spray over medium-high heat until translucent and tender. Add in fresh spinach and cook until just wilted. Set aside to cool for a few minutes
In a large mixing bowl, whisk together eggs, flour, baking powder. Whisk in milk, then stir in spinach-onion mixture.
Pour quiche base into prepared pan. Top with feta cheese and a sprinkle of paprika.
Bake for 25 minutes, or until center is set and the outside edge is golden brown.
Let set for 5 minutes, then slice and serve.
