Introduction

These yummy muffins an ideal treat for a Paleo (or Primal) eater. In each muffin you get 8g of healthy fat and 4.5 g of protein with a low 6.5 g of sugar. Ingredients

    Dry Ingredients
    1/2 c Coconut Flour
    2 tbsp Tapioca Starch
    1 tbsp Cinnamon
    1/2 tsp Ginger
    1/2 tsp Baking Soda
    1/4 tsp Baking Powder

    Wet Ingredients
    6 Eggs
    5 tbsp Unsalted Butter, melted
    1/2 c Unsweetened Applesauce
    1/4 Pure Maple Syrup (the lower the grade, the better)
    3/4-1 c Blueberries, fresh or thawed

Directions

Sift dry ingredients to combine
Whisk together wet ingredients (minus berries) until combined
Add dry ingredients to wet and mix well.
Stir in blueberries.
Scoop into well-greased muffin tins and bake for 15 min at 400 degrees.
