I like to keep these tasty little muffins on hand for a quick, easy and healthy breakfast in the mornings. Good warm or cold, delicious with a cup of coffee! Ingredients

    1 c. all-purpose flour
    1 c. regular oats
    1/2 c. sugar
    1/4 c. wheat germ
    2 tsp. baking powder
    1/4 tsp. baking soda
    1/4 tsp. salt
    2/3 c. mashed very ripe banana (about 2 small)
    1/3 c. reduced-fat sour cream
    1 large egg
    1/4 c. canola oil
    1 tsp. vanilla extract
    Cooking spray

Directions

Preheat oven to 375F. Combine flour, oats, sugar, wheat germ, baking powder, baking soda and salt in a large bowl. Combine banana, sour cream, egg, oil and vanilla in a small bowl; add to dry ingredients, stirring just until moist. Spoon batter evenly into 12 muffin cups coated with cooking spray. Bake at 375 for 21 minutes or until a toothpick comes out clean. Remove muffins from pans immediately; place on a wire rack. Serve warm.
