Ingredients

    Red Ripe Tomatoes, 3 medium whole (2-3/5" dia) diced
    Onions, raw, .33 cup, chopped
    Yambean (jicama), raw, 1/3 diced
    Mangos, 1 cup, diced
    Cilantro, raw, 1 tbsp chopped
    *lime juice from 1/2 med size lime
    Garlic, 2 cloves minced
    jalepeno

Directions

Wash all vegetables. Dice tomatoes and put in bowl. Add chopped onion, diced jicama, diced mango, cilantro, jalepeno and garlic. Season with salt and pepper and sprinkle with lime juice. Chill and let flavors blend. Serve with chips or on tacos or burritos.
