    1/2 cup finely chopped onion
    1/4 cup finely chopped red bell pepper
    1 jalapeno or other hot pepper, finely chopped
    8 oz cooked chicken, finely chopped or shredded
    1 can (14.5 ounces) diced tomatoes with green chilies
    seasonings to taste
    2 egg whites
    1/2 cup milk
    1 pkg (6 oz) cornbread mix
    1 cup shredded mozzarella or any combination of low fat or fat free cheeses


Saute onion and peppers in cooking spray for 3-5 minutes. Add chicken, tomatoes with green chilies, and season to taste. Continue cooking for about 5 minutes. Combine egg whites, milk, and cornbread mix in a baking dish, mixing well. Spoon chicken and veggie mixture on top of the batter and then top with shredded cheese. Bake at 400 F for 15-20 minutes.
