1 serving reduced sodium black beans
1 oz diced onion
1 oz diced tomato
1 oz diced green pepper
1 c. cauliflower
1 c. broccoli
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp cumin
1 tbsp garlic powder
Directions
Sautee vegetables in olive oil and balsamic vinegar
Once browned, add black beans, cumin & garlic powder
Cook rice as directed on box.
Add rice to vegetable/bean mixture until mixed. Serve hot.
