Ingredients

    Vinaigrette:
    1 lemon
    1/4 cup red wine vinegar
    2 tbsn olive oil
    1 tspn sugar (I used 1 packet of truvia)
    1/4 tspn dired oregano leaves
    1/4 tspn salt
    1/8 tspn black pepper

    Salad:
    2 cups uncooked shell pasta
    1 small cucumber - sliced (1 cup)
    1/2 small red onion - sliced into thin wedges
    1 cup grape tomoatoes - halved
    10 pitted Kalamata olives - chopped
    5 cups salad (I used romaine)
    12 ounces tuna
    1/2 cup crumbled feta cheese

Directions

1. For vinaigrette - juice lemon to measure 2 tbspn juice. Combine lemon juice, binegar, oil, sugar, oregano, salt and pepper. Whisk until blended. Set aside.

2. Salad - cook pasta. Drain and rinse under cold water.

3. Slice all tomoatoes and shred salad

Place pasta in large bowl, add vegetables, olives, salad greens and tuna. Pour vinaigrette over salad, tossing to coat. Spring with cheese
