Introduction

My kids beg for these, and you can substitue just about any fruit you like! My kids beg for these, and you can substitue just about any fruit you like!
Number of Servings: 12

Ingredients

    1/4 cup egg substitute
    3/4 c. skim milk
    1/2 c. fat free plain Greek yogurt
    1 t. vanilla
    1/2 c. whole wheat flour
    1 c. unbleached flour
    1/2 c. sugar
    1/2 t. salt
    2 t. baking powder
    3/4 c. raspberries, fresh or thawed

Directions

Mix egg, milk, yogurt and vanilla until smooth. Add remaining ingredients, stirring until blended. Divide into 12 muffin cups (lined or sprayed with cooking spray). Bake at 400 degrees for 15-20 minutes, until golden brown.
