Ingredients

    1 cup unbleached all-purpose flour
    1 tablespoon unsweetened cocoa powder
    3/4 teaspoon baking soda
    1/4 teaspoon salt
    1/4 cup margarine
    3/4 cup white sugar
    1 eggs
    1 teaspoon vanilla extract
    1 cup unsweetened applesauce
    1/2 cup semisweet chocolate chips

Directions

Preheat oven to 350 degrees F (175 degrees C). prepare cupcake tins with paper cups.
Sift together the flour, cocoa, baking soda and salt. Set aside.
In a large bowl, cream the butter and sugar together until light and fluffy, using an electric mixer set on medium speed. Beat in the egg.
Blend in the vanilla extract. Beat in the flour mixture alternately with the applesauce.
Pour the batter into 12 cupcake liners.
Sprinkle with the chocolate chips.
Bake at 350 degrees F (175 degrees C) for 20-25 minutes or until a toothpick inserted into the center of the cupcake comes out clean.
Cool in the pan on a wire rack.
