Introduction

Full in flavor, low fat egg white omelet with spinach, feta cheese, asparagus, mushrooms, onions, and grilled chicken breast. Full in flavor, low fat egg white omelet with spinach, feta cheese, asparagus, mushrooms, onions, and grilled chicken breast.
Number of Servings: 1

Ingredients

    2 egg whites
    1/4 cup- sliced mushrooms
    1/4 cup- asparagus cut into bite size serving pieces
    1 cup- fresh spinach leaves
    1/4 cup- chopped onions
    2 oz. cooked grilled chicken, chopped into bite size pieces
    1 oz. feta cheese, crumbled
    2 tbs Any homemade or commercial brand salsa (optional)
    PAM spray

Directions

In pan coated with PAM, saute asparagus and cook until firm but tender about 3 min. Add spinach, mushroom, onions, and chopped grilled chicken breast to asparagus and saute for 1-2 min more and remove from pan. Cook egg white in omelet pan coated with PAM until cooked. Add to omelet feta cheese, vegetables and chicken and fold over, remove from pan and serve with salsa. Enjoy!!
