Introduction

Potato Salad with Greek Yogurt instead of Mayo! Potato Salad with Greek Yogurt instead of Mayo!
Number of Servings: 16

Ingredients

    8 medium potatoes
    16 oz greek yogurt
    3T Dijon mustard
    1 lemon (zest and juice)
    1T apple cider vinear
    1 medium red bell pepper, diced finely
    2 stalks celery, diced finely
    1/4c green onion/ chives
    dill, parsley (or any fresh herbs you like!)

Directions

Chop potatoes, leaving skin on. Boil until tender, but not mushy. While potatoes are boiling, chop celery (2 stalks), green onion (to taste), red bell pepper (or any color), and herbs. Drain potatoes and add to vegetables in a large bowl. Mix the 16 oz of greek yogurt, 3 T of good mustard, 1 T of vinegar, and juice/zest of lemon in bowl. Add dressing to potato mixture and fold until blended. Chill and serve!
