Ingredients

6 baby potatoes peeled and cut up
1/2 Sweet Onion, diced
2 Cloves of Garlic, diced
1/4t Cumin
1/4t Tumeric
1/8t Garam Masala
1/8t Cinnamon
1 Can Diced Tomatoes (Drained)
1 Can Chickpeas (Drained)
Salt/Pepper to taste
1/3C Dried Apricots
Splash Lemon Juice
Directions
Steam or boil Baby Potatoes for 10m
Set aside
In the same pan, sautee 1/2 diced sweet onion and 2 cloves of garlic for 5m
Add 1/4t Cumin, 1/4t Tumeric, 1/8t Garam Masala, 1/8t Cinnamon, 1 can diced tomatoes, 1 can chickpeas and cook for 10m
Add potatoes back in along with 1/3c dried chopped apricots
Add a splash of lemon juice
Can be served over rice, quinona, or in a roll up
