Ingredients

    * 1 Box Mori Extra Firm Tofu
    * 1 packet Fantastic Foods Tofu Scrambler
    * 1 can Diced tomoatoes and green chilies
    * 1 small can mushrooms
    * 1 cup Salsa
    * 1/2 cup quesadilla cheese
    * Spike seasoning (to taste)
    * Marinated Jalepenos for garnish (optional)

Directions

Spray frying pan with non-stick spray. Add tofu scrambler packet, Tofu and undrained can of tomatoes and chilis, stir over low heat as you break apart the tofu. When well blended and starting to get warm, add the can of drained mushrooms and salsa. Once heated through add cheese and stir in just before serving. Add Spike to taste and few marinated jalepenos (if you dare!).
Delicious, husband eats meat and requests this at least once a week. Enjoy!
