Introduction

An adaptation of my other recipe lowering sodium with different ingredients - if you cut back on the cheese or use a different brand (I used No Name here) you can possibly cut down on sodium, fat and cholesterol further - usually I add red peppers as well but I didn't have any today. Ingredients

    1/4 c red onion diced
    1 tsp minced garlic
    cooking spray
    1 head broccoli ( 1c) chopped
    4 egg whites
    2 eggs
    1 1/4c 1% milk
    2 TBSP light (5%) sour cream
    1 tsp dijon mustard
    8oz (uncooked) peameal bacon (about 6 slices)
    2/3 c shredded mozzarella cheese
    3 dashes hot sauce or tobasco sauce
    2 dashes black pepper

Directions

Preheat oven to 400 degrees.
Spray a 10 inch round stoneware casserole or pie plate with cooking spray (or use a deep dish regular pie plate).
Cook peameal bacon and chop.
In peameal bacon pan, add garlic, onion and broccoli - stir fry for a couple of minutes (broccoli will turn bright green). remove from heat.

Meanwhile, in a large bowl whisk together egg whites and eggs, add milk, sour cream, flour, baking powder, dijon mustard, cumin, tobasco sauce, pepper.
Add broccoli mixture and bacon. Add cheese. Pour into Pie plate. make sure everything is even mixed.

Bake uncovered for 40 min. Remove from oven and let sit for 5 min.
