    Eggplant sliced and cooked in olive oil
    Greek style fat free yogurt
    Shredded Mozz. cheese
    Parmesan cheese, grated
    Fresh Basil Leaves, chopped
    Rotini Pasta
    Fresh cherry tomatoes, chopped


Directions

Cook Pasta
Cook eggplant
Combine cheeses, yogurt and basil
Combine everything in baking dish
Bake for 15 minutes at 350 degrees
