Ingredients

    * 1 1/4 lb. stew beef, cut in 1-inch cubes
    * 1/4 c. flour
    * 2 tbsp. oil
    * 2 14.5 oz. cans of diced or stewed tomatoes
    * 1 14 oz. can beef broth
    * 4 medium carrots, pared, cut in 1-inch chunks
    * 2 medium potatoes, pared, cut in 1-inch chunks
    * 3/4 tsp. thyme
    * 2 tbsp. Dijon mustard (optional)

Directions

Combine meat and flour in a plastic bag; toss to coat evenly. In a 6 quart pot, brown meat in oil. Season with salt and pepper if desired. Add remaining ingredients, except mustard. Bring to boil; reduce heat. Cover and simmer 1 hour or until beef is tender. Blend in mustard. Serve with warm crusty French bread, if desired.
