Number of Servings: 2

Ingredients

1/2 Medium Green Pepper, thinly sliced
    1/4 C Sliced Fresh Mushrooms
    1 tsp butter (I use I can't believe it's not butter)
    1 tsp Dijon Mustard
    2 Slices Texas Toast, Toasted
    1/2 Medium Tomato, sliced
    1/3 C Thinly Sliced Onion
    1/4 tsp Ground Cumin
    2 tsp Miracle Whip
    1/4 tsp Prepared Horseradish
6 Slices Deli Roast Beef or Ham
    1/2 C Shredded Cheddar Cheese

Directions

In a nonstick skillet, saute the green pepper, onion, mushrooms and cumin in butter until vegetables are tender. In a small bowl, combine the miracle whip, mustard and horseradish; spread over toasted Texas toast. Top with the pepper mixture, beef, tomato and cheese. Broil 4-6 inches from the heat for 2-3 min. or until cheese is melted.
