Introduction

Number of Servings: 6

Ingredients

    500g roast lamb leftover
    1 onion chopped
    2 cloves garlic (optional)
    Celery - 1 stalk - diced
    Carrots - 1 medium - diced
    Potatoes - 1 medium diced
    1 cup mushrooms
    1 aubergine
    1 tin of passata or chopped tomatoes
    2 tbsp of Pataks Madras Curry Paste
    1 cup of water
    Spray low calorie oil

Directions

Spray pan with oil. Add diced onions, garlic, carrots and celery. After about 5 minutes add diced potato, mushrooms and aubergine. Stir in curry paste. Add tomatoes and water. After 10 minutes add diced lamb. Cook for a further 20 minutes. Serve with rice or couscous.
