Introduction

Just like Chili's, but good for you! Just like Chili's, but good for you!
Number of Servings: 7

Ingredients

    2 tbsp diced red bell pepper
    2 tbsp diced green onion
    2 chicken breasts, cooked & shredded
    1/2 cup frozen spinach, thawed & drained well
    1/2 cup frozen corn kernels
    1/2 cup black beans, rinsed & drained
    2 tbsp diced jalepenos
    1/2 tsp cumin
    1/8 tsp salt
    1/2 tsp chili powder
    dash ground cayenne pepper
    1 cup shredded colby jack cheese
    7-8 whole wheat tortillas
    toothpicks


Directions

cook onions & red pepper until tender. add chicken, remainder of veggies, spices and cook for 5 minutes. stir in cheese and allow to melt.

spoon approx. 3 tbsp of mixture into each tortilla and roll like a little burrito, securing with a toothpick. place seam side down in baking dish coated with cooking spray and bake @ 450 for 15-20 minutes. serve with guacamole and/or sour cream.
