Introduction

High Fibre! High Fibre!
Number of Servings: 12

Ingredients

    Fiber One Cereal, 2 cup (Crushed)
    Flour, white, 1 1/4 cup
    Canola Oil, 1/2 cup
    Brown Sugar, 1/2 cup, packed
    Egg, fresh, 1 large
    Milk, 1%, 1 1/2 cup
    Baking Soda, 1 tsp
    Vanilla Extract, 1 tsp
    Salt, 1/4 tsp
    White Vinegar, 1 tbsp

Directions

Crush cereal in a bag or use a food processor. Set aside.
Blend egg, vanilla, and canola oil in a medium bowl. Set aside.
Mix Milk and vinegar in a small bowl (or use buttermilk and omit the vinegar) Set aside.
Mix all dry ingredients, except cereal, well. Set aside.
Preheat oven to 400F. Grease bottom only of a 6 jumbo muffin pan.
This next step must be done quickly so the baking soda will react with the vinegar so the muffins will rise in the oven not in the bowl.

Add milk and cereal to egg/oil/vinegar mixture mix well.
Add above mixture to flour mixture and mix with a spoon until just moistened (about 50 strokes)

Now, mixture is very thick and doesn't seem like muffin batter but trust me these bake up nicely. Add equal amount to each muffin pot and pop in the oven for 18-22 mins or until a toothpick inserted in centre comes out clean.
Cool on a wire rack for 5 mins then remove from pan and completely cool the muffins on the rack.
