    1 Medium Cucumber- Peeled & chopped (remove seeds if desired)
    1/4 Cup shredded carrots
    1/4 Cup Red Wine Vinegar
    1.5 Tbsp Extra Virgin Olive Oil
    1/2 Cup Red Cabbage
    1 tsp Italian Seasoning
    1 tsp Black pepper
    1/8 tsp of Sea Salt
    red onion-sliced (optional)


Toss all ingredients together except red cabbage. Refrigerate until ready to serve. Layer each salad plate/bowl with some shredded red cabbage. Makes 2--1/2 cup servings
