From CNN's Accent Health, this recipe is absolutely delicious. I found this recipe while waiting in the doctor's office last week. I compared the nutrition value added from accent health with Sparkrecipe's calculator. It's pretty close but I would probably go with Accent health's nutritional information over sparkrecipe's.The sodium is higher on Accent health's. Ingredients

    Yield: 4 servings

    1/4 cup panko crumbs (or other fine bread crumbs – whole wheat if possible)

    1 teaspoon lemon zest

    1 tablespoon finely diced chives

    4 ounces goat cheese

    6 cups arugula

    1-1/2 cups strawberries, sliced

    1/4 cup thinly sliced red onion

    2 tablespoons toasted sliced almonds

    Balsamic Vinaigrette:

    1 tablespoon balsamic vinegar

    1/2 tablespoon honey

    1 tablespoon lemon juice

    2 tablespoons olive oil

    Salt and pepper to taste


Directions

Preheat oven to 425 degrees Fahrenheit. Place oven rack in middle section of oven.

Place crumbs in a bowl and add lemon zest and chives. Slice goat cheese into 8 even slices. Lightly press each slice into the crumbs. Place into preheated oven for approximately 5 minutes or until slightly browned and runny. Remove from oven and set aside.

To make the Balsamic Vinaigrette… whisk the vinegar, honey, and lemon juice in a small bowl. Slowly drizzle in olive oil until well mixed. Season with salt and pepper.

Lightly toss the arugula, strawberries, and red onion in the vinaigrette. Split salad between four plates and place two slices of goat cheese on top. Sprinkle with toasted almonds and enjoy.

Serving Size: Makes 4 servings, roughly 1.5 cups

    Really good! Loved the lemony flavor. Skipped the almonds since I can't eat nuts right now, and I breaded my cheese with crushed Shredded Wheat cereal instead of panko so that it would be whole wheat and sodium-free. Used a bit less EVOO, too. A nutritious and very satisfying meal! - 10/13/12
