Ingredients

    6 egg whites (or 3/4 egg substitute)
    1 oz. shredded low-fat cheddar cheese
    1 c. frozen pearl onions
    1 1/4 c. chopped tomatoes
    1/4 c. rinsed and chopped kidney beans
    1 c. chopped asparagus spears
    1 1/3 tsp. olive oil, divided
    1 tsp. minced garlic
    1/8 tsp. celery salt
    1/8 tsp. lemon herb seasoning
    1/8 tsp. chili powder
    1/2 tsp. balsamic vinegar
    1/8 tsp. Worcestershire sauce
    salt and pepper to tast

Directions

In a medium nonstick saute' pan, heat 2/3 tsp. olive oil. Saute' onion, tomato, beans, asparagus, and seasonings for 5-7 minutes. Heat remaining oil in second saute' pan. Pour in egg substitute, spread around pan, and lightly season with salt and pepper. When set, spoon mixture onto half of omelette. Fold over and remove to serving plate. Top with cheese and serve.
