Ingredients

Green Peppers (bell peppers), 0.5 cup, chopped
Onions, raw, .50 cup, chopped
Las Palmas Enchilada Sauce, 1.5 cup
Rotel Diced Tomatoes and Green Chilies, 1.5 cup
Cabot 75% Reduced Fat Sharp Cheddar Cheese, 6 oz
Corn Tortillas (3 Tortillas per serving), 4 serving
Minute Ready to Serve Spanish Rice, 1 cup
Olive Oil, 2 tbsp
Directions
Put oilve oil in large skillet
Saulte onion and pepper
Add Ground Turkey and cook until no longer pink.
Add Diced Tomatoes and Green Chilies
Add Taco Season packet (per package directions)
Add Spanish Rice
Cook for 10 minutes on Medium Heat
When all is blended together turn off heat and let sit
Soften Tortilla as directed on package
Put 1/3 of enchila sauce in baking dish
Each Tortilla receive a scant 1/4 C of filling, roll up and put in sauce seam side down. When all are filled and in dish
put remainig enchilada sauce over them, sprinkle cheese on top and bake 15-20 minutes at 350 until cheese is melted and starting to turn light brown. Let sit for 5 minutes before serving.
Serving Size: Makes 12 Enchilada's (Serving Size is 2)
