Preheat oven to 350 degrees Preheat oven to 350 degrees

Directions

Brown turkey, onion and garlic until browned. Add eggplant, tomatoes and basil. Bring to a low boil for 5 min. Transfer to a sprayed 9 x 13 dish. Sprinkle bread crumbs on top. Cover with foil. Cook 60 min @350. Remove foil and add sprinkle with parmesan
