Ingredients

¾ cup chopped onion
¾ cup chopped green bell pepper
2 cloves garlic, minced
1-½ tablespoon olive oil
1-½ teaspoon all-purpose flour
1 (15 ¼ oz.) can Muir Glen Organic Fire Roasted diced tomatoes
½ cup Best Choice® Salsa Verde
1 teaspoon dried whole oregano or 1 tablespoon fresh oregano
½ teaspoon ground cumin
½ teaspoon chili powder
1 pinch sea salt
1/8-teaspoon pepper
¼ cup white wine
2 whole-wheat tortillas, halved
½ cup shredded sharp cheese
1/3 cup sliced black olives
5 large eggs
Best Choice® Salsa Verde
Directions
1. In a skillet, sauté onion, green pepper, and garlic in oil.
2. Stir in flour and cook 1 minute.
3. Add remaining ingredients except for cheese and olives; cook over medium heat 5 minutes.
4. Pour half of the sauce into an 8-inch square-baking dish.
5. Arrange the halved tortillas over the sauce. Pour the remaining sauce over the tortillas.
6. Sprinkle with cheese and olives.
7. Place baking dish in a preheated 350°F.oven and bake for 15 to 20 minutes.
8. Just before the sauce is finished cooking, cook each egg as desired.
9. Divided the sauce and place on each on a serving plate. Top the sauce with a cooked egg.
10. Serve immediately with additional salsa verde.
