Introduction

This is a fantastic replacement for a classic comfort food dish! It's rich, creamy, and cheesy! You won't miss the pasta!

I know the sodium is high, and that's mostly due to the soup. If you can find a way to substitute, have at it! Just remember that shiratakis don't soak up excess liquid like pasta does, so your sauce needs to be thick to begin with. I generally keep my sodium pretty low throughout the day, so one dish with a lot of salt every once in a while is worth it to me.

Ingredients

    8oz bag of tofu shirataki noodles (see prep instructions)
    100g Tyson Premium Chunk White Chicken in water, drained
    1 can Campbell's Healthy Request Cream of Chicken Condensed Soup
    1/4 cup shredded Fat Free cheddar or mozzarella cheese
    1oz reduced fat cheddar cheese, shredded
    1 cup frozen mixed veggies
    Topping: 4 Keebler Multigrain Club crackers, crumbled

Directions

RINSE shiratake noodles thoroughly to eliminate their natural odor (smells a little like fish). I even boil mine for a few minutes first!

Combine all ingredients until well blended. Bake covered with foil in one or two small casserole dishes at 375 for 20 minutes until bubbling. Removed cover, sprinkle with cracker crumbs, and brown in the oven.

Let stand for a couple minutes and serve!

I did not measure the serving size, but I estimate it makes 2 approximately 1 3/4 cup servings...which is plenty!!!

    This was great and super easy. I don't like to eat pasta at night so this recipe made my husband happy since it was just like having a nice pasts dish. - 9/23/11
