Ingredients
-
2 skinless, boneless chicken breasts (aprox. 120 grams each)
marinade/seasoning of your liking (not incl. in nutrition info)
2 medium slices of onion
1 container Macedonian Feta Cheese (aprox. 120 grams)
fresh baby spinach
4 tortilla wraps/pita of your choice (wraps can vary greatly so not incl. in nutrition info)
Directions
Note: I measure/weigh the ingredients and the nutrition information is based on the measurements I use (listed here per serving).
1. Season/marinade chicken to your liking. Place in baking dish with onion slices and bake/broil until done. (Or use leftover chicken from dinner!!)
2. While chicken is cooking:
a) place spinach leaves (10 grams) onto tortilla shells (or Ziploc bags for use later)
b) divide container of feta cheese into 4 equal parts (30 grams each), crumble and place into tortillas (or Ziploc bags).
3. Once chicken is done, allow to cool completely and then slice or chop. Divide onion and chicken equally into tortilla shells (or Ziploc bags) (60 grams each).
4. Close tortilla and enjoy!
I usually make one tortilla to eat now, and store the rest for lunches the next couple days.
To easily take for a warm lunch, use a large Ziploc and place tortilla inside.
Place feta and spinach in snack size bag and place inside the large bag.
Place chicken in its own snack size bag and place inside the large Ziploc as well.
At work, remove all the small bags. Warm tortilla in microwave (in the Ziploc bag).
Warm chicken in microwave. (While chicken is warming, add spinach/feta to tortilla.)
Add the warm chicken, wrap up and enjoy!
Very versatile: you can add other veggies, add some greek dressing, substitute frozen spinach/lettuce etc.
Serving Size: This will stuff full 4 (6") tortillas.
Number of Servings: 4
