Number of Servings: 4

    1 cup breadcrumbs
    1 cup grated Parmesan cheese
    1 tablespoon thyme
    2 large eggs
    1/4 cup all purpose flour
4 boneless pork loin chops (each about 1 inch thick)
    2 tablespoons olive oil

Preheat oven to 435. Mix breadcrumbs, cheese and thyme in pie dish. Whisk eggs in medium bowl to blend. Place flour on plate and season with salt and pepper. Coat pork chops on both sides with flour and shake off excess. Dip pork chops into eggs, then coat on all sides with breadcrumb/cheese mixture.

Heat olive oil in a heavy large ovenproof skillet over medium-high heat. Add pork chops to skillet and cook until golden brown, about 2 minutes per side. Transfer skillet with pork chops to the oven and bake until pork chops are crisp on the outside and meat thermometer insterted into pork registers 165, about 20 minutes.

Remove from oven and let stand for 5 minutes before serving.
