Introduction

Ingredients

    1 1/2 cups wheat bran
    1 cup milk (1%)
    1/2 cup unsweetened applesauce
    1 egg
    1/3 cup Splenda (brown sugar blend)
    1/2 tsp vanilla extract
    1 cup Robin Hood Nutri Flour blend
    1 & 1/4 tsp baking soda
    1 & 1/4 tsp baking powder
    1 tsp cinnamon
    1/2 tsp salt
    1 cup diced strawberries (fresh)
    1/3 cup chopped walnuts
    Cooking spray

Directions

1. Preheat oven to 375 degrees F (190 degrees C). Lightly spray muffin tins with cooking spray. Mix together wheat bran and milk, and let stand for 10 minutes.

2. In a large bowl, mix together applesauce, egg, Splenda, and vanilla. Beat in bran mixture. Sift together flour, baking soda, baking powder, cinnamon, and salt. Stir into bran mixture until just blended. Fold in fruit and nuts. Scoop into muffin tins (should yield 12 medium muffins).

3. Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.
