Introduction
These are fairly healthy and highly flavorful chicken tacos. These are fairly healthy and highly flavorful chicken tacos.Number of Servings: 10
Ingredients

1 tbsp. extra virgin olive oil
1 tsp. butter
2 skinless boneless chicken breasts - cut in 1 inch squares
1 medium sweet onion - sliced thin
4 cloves of fresh garlic - crushed
1 - 14.5 oz. can of petite diced tomatoes
1 c. chicken stock
1 tbsp. ground cumin
1 tsp. Tabasco sauce
1/4 c. shredded Mexican cheese
10 - 6.5 in. flour tortillas
Directions
Put the olive oil and butter in a large, deep frying pan (with a lid)
Heat oil and butter on medium heat
Add onions and garlic and reduce heat to low to keep garlic from browning
Add chicken and cook until "white" on all sides
Add cumin, Tabasco sauce, can of tomatoes with liquid and chicken broth
Stir together thoroughly, turn heat to low, cover and allow to simmer for about 3 hours
There is no need to "watch" this as long is it is on low heat but you should stir it occasionally to prevent and excessive browning or burning
It is ready when chicken easily "shreds" with your spatula or vinyl "spoonula"
The slow-slow cooking makes the chicken melt-in-your-mouth and the flavors combine beautifully
Assemble tacos and top with a light sprinkle of the Mexican cheese
