Ingredients

    1/2 c. low-fat tofu
    1 tsp. safflower oil
    3/4 c. mixed vegetables (carrots, onions, red pepper, broccoli)
    soy sauce, to taste
    pepper, to taste
    2/3 c. cooked brown rice
    1 c. green salad
    1 tbsp. non-fat salad dressing

Directions

Heat oil in heavy skillet or wok. Brown tofu. Add vegetables till tender. Add cooked brown rice and season to taste with soy sauce and pepper. Serve with green salad and non-fat salad dressing.
