Ingredients

1 1/4 cup oats
1 tsp baking powder
1/4 tsp salt
2 tbs honey
1/3 tbsp lemon juice
1/2 cup 2% milk
1 tbsp canola oil
1 tbsp ground flax seed
1 medium apple
1/2 tsp cinnamon
Directions
Pour 1/3 tbsp lemon juice into measuring cup. Add milk to measuring cup until it's 1/3 cup. Mix & let sit 10 minutes.
Grind oats in food processor until powdery to make oat flour.
Add baking powder, cinnamon, sea salt to oat flour & mix.
Chop up apple into small pieces, but not pureed... and set aside. (I used a food processor)
In separate dish, mix flax seed with 3 tbps of warm water.
In separate bowl, mix lemon/milk mixture, honey, canola oil, and flax seed mixture. Blend. Mix in apples.
Add liquid ingredients to dry ingredients & mix lightly.
Fill 12 greased (I used Pam spray) muffin tins & bake for 15 minutes at 425 degrees.
Serving Size: makes 12 small (low-rise) muffins
