    3 cups nonfat milk
    6 large eggs
    8 oz. Swiss cheese, shredded or sliced
    .5 tsp black pepper
    .5 tsp salt
    .5 tsp nutmeg
    1 cup fresh mushrooms, sliced
    1.5 cups fresh spinach, chopped
    2 9" deep dish ready to bake pie crusts


- Scald 3 cups of milk.
- Mix the eggs, pepper, salt, and nutmeg in a bowl.
- Place half of the spinach, mushrooms, and cheese in each pie crust.
- Slowly mix the milk into the egg mixture.
- Pour the milk and eggs into the crusts.
- Bake at 450 for 10 minutes.
- Bake at 350 for an additional 20 minutes or until firm.
- Cool for a few minutes before cutting to solidify.
- Cut each pie into 8 pieces.
- Enjoy with a tossed salad! : )

Serving Size: Makes 2 pies of 8 slices each or 16 slices.
