Introduction

I use fresh baby spinach for this--and my handy-dandy little omelette pan (a two-sided pan that snaps together for easy flipping)! I use fresh baby spinach for this--and my handy-dandy little omelette pan (a two-sided pan that snaps together for easy flipping)!

Ingredients

    2 lg. eggs
    1 c. fresh spinach
    2 slices tomato
    1 slice deli-style American Cheese
    1 slice whole wheat bread, toasted
    Sea Salt and Ground Pepper, to taste

Directions

Preheat skillet/pan. In a bowl, combine eggs, spinach (sliced), salt, and pepper. (If necessary, use a spray to lubricate the pan...I do not).
When finished, put on top of toast, top with slice of American cheese, then tomato slices. I garnish with a few extra spinach leaves!

Serving Size: Makes 1 Sandwich
