Ingredients

    2 tbsp butter
    2 small or 1 1/2 medium peaches, pitted and diced into 1/2" cubes
    1 tbsp brown sugar, packed
    1 tbsp half and half
    4 slices sourdough bread (6 oz. total, or 1.5 oz per slice)
    1 egg
    1/4 cup milk
    1/4 tsp cinnamon

Directions

1. In a small skillet, over medium-low heat, melt 1 tablespoon of the butter until it foams. Add the brown sugar and stir for 30 seconds. Add the peaches, raise heat to medium-high, and cook, stirring frequently, for 3 minutes. Stir in the half and half and simmer for 2 minutes. Transfer to a bowl.

2. Place 2 slices of the bread on a cutting board. Divide the peach mixture evenly among the slices, leaving a 1/2-inch border on all sides. Top with another slice of bread and press gently.

3. In a shallow bowl or pie plate, beat the egg, milk and cinnamon. Working in batches, soak the sandwiches in the egg mixture briefly.

4. Meanwhile, melt 1 tablespoon of the butter in a large skillet over medium heat. Fry 2 sandwiches until golden brown, 3 to 4 minutes per side. (Or brush melted butter on a griddle and fry sandwiches 3-4 minutes per side until golden.)

5. Optional: Serve with whipped cream, maple syrup, plain or vanilla yogurt, confectioner's sugar, etc. (None of these included in calorie count.)

6. Could stretch this recipe to serve four by also serving fresh fruit, cottage cheese, etc., and only serving 1/2 a sandwich per person.

Serving Size: Makes 2 sandwiches, 1 sandwich per person.
