Introduction

A lunch that's simple to premake and then be tossed in the microwave. A lunch that's simple to premake and then be tossed in the microwave.
Number of Servings: 1

Ingredients

    1 medium Sweet Potato
    1 cup cooked Spinach
    1/3 cup Salsa
    2/3 cup Black Beans

Directions

The best way of making this lunch is to pre-cook it, and then microwave it once you're ready to eat it.

Lightly wash spinach and place in a pot (if making from frozen, just place them in a pot) and heat. Occasionally stir and add water if needed until spinach is fully cooked.

While doing so, poke holes all over sweet potato and microwave for ~5 to 7 minutes, or until soft.

Drain and rinse black beans.

Mix all together or eat separately--your choice!

***Side note: You can also warm the salsa in the microwave, and eat it with a spoon, like a little spicy soup!
